Meet the Makers: The Reinstrom Family
I sat down recently with Derek Reinstrom of Byrne’s Grilled Pizza. Derek is the son of Ken and Dot Reinstrom who started Byrne’s and the 23-year-old is their point man at our Market and for other markets, parties, festivals, and fairs this year. He and 17-year-old brother Adam, are very involved in the family business!
The Byrne’s food truck was one of the first to hit the streets in Indy. They participate in the First Friday Food Truck Fest downtown and Cluster Truck on most Wednesday evenings. They currently have a truck, two tents, and three grills, enabling them to cover three events at one time. That definitely keeps them busy!
With a new business plan for 2012, their emphasis is on the markets and festivals and on catering private parties. It must be working because the business has seen a 60% growth over 2011. Derek says they’ve learned a lot and are much more efficient now.
There has been no change in the product since last year. They still use the same unique dough recipe (although they have outsourced the labor to Cornerstone Bread Co.). They still use their homemade sauce, and they hand chop the vegetables, and use their signature asiago/mozzarella mix, with fresh mozzarella topping. The best-seller at the Saturday morning Market is their Breakfast Pizza with eggs, sausage, mushrooms, and onions.
According to Derek, they are “focused on keeping the customers happy with the freshest, high-quality product that looks, smells, and tastes great – and to have fun doing it!” Byrne’s will be serving grilled pizza at the Summer Concert Series this Friday, from 7-9:00 p.m. at Broad Ripple Park.
